Guilin Bamboo Tube Rice
Guilin Bamboo Tube Rice is a "natural gift" from the mountains, using fresh bamboo tubes as containers to lock in the most authentic aroma of ingredients. The process involves selecting tender bamboo tubes about 5 cm in diameter, sawing them into 30 cm sections, washing them, and filling them with soaked glutinous rice, which can be mixed with cured meat, corn kernels, peas, mushrooms, and other ingredients. A small amount of mountain spring water is added, the tube is sealed with bamboo leaves, and roasted over charcoal for 40 minutes. Under high temperature, the bamboo gradually releases bamboo juice, which blends with glutinous rice and ingredients. When the tube is split open, the glutinous rice is translucent, each grain wrapped in bamboo fragrance, with the saltiness of cured meat, sweetness of corn, and freshness of bamboo intertwined, bringing a touch of mountain freshness to every bite. The magic of bamboo tube rice lies in the penetration of bamboo aroma, which neither overpowers nor masks other flavors but removes fishiness, enriching the taste of ordinary glutinous rice. In Guilin's mountain markets, villagers often sell it from charcoal stalls; when the bamboo tube is split, white smoke curls and aroma fills the air. Foreigners will be delighted by this "cooking with bamboo" idea, finding it like a nature-made picnic box—eco-friendly and delicious, perfect for lunch after visiting Elephant Trunk Hill or Reed Flute Cave, echoing Guilin's landscapes with its flavor.
