Guilin Waxberry Wine
Guilin Waxberry Wine is a "sour-sweet star" among summer fruit wines, made by soaking local fresh waxberries in rice wine, with perfect integration of fruit and wine aromas. To make it, plump red waxberries are washed, dried, and placed in a glass jar, layered with rock sugar, then covered with rice wine, sealed, and soaked for 1-2 months. The brewed wine is an attractive purple-red; opening the jar releases a strong waxberry fragrance. It tastes sour, sweet, and refreshing with an alcohol content of about 10-15 degrees, and a faint rice wine aftertaste. The fruit acid of waxberries balances the wine's strength, making it easy to enjoy even for non-regular drinkers. At summer banquets in Guilin, iced waxberry wine is a great heat-reliever. After drinking the wine, you can eat the soaked waxberries—their flesh absorbs the wine, offering a sweet-sour, wine-infused flavor. As a souvenir, it's often in transparent glass bottles, showing fruit sediments, full of natural charm.
