Guilin Sponge Cake
Guilin Sponge Cake is a common pastry during festivals. It is mainly made of glutinous rice flour and sticky rice flour, mixed with white sugar, brown sugar, and water to form a loose dough. Before steaming, dried fruits like red dates, raisins, and peanuts are added to the dough, and a layer of brown sugar powder is sprinkled on top. The steamed sponge cake has a light yellow color, a soft texture, and a sweet taste. The sponge cake symbolizes "rising higher and higher." During festivals such as the Spring Festival and the Double Ninth Festival, locals will make sponge cakes to share the sweetness and blessings.
